17. LITTLE PHIL’S YUMMY GUMBO

Very Simple and Extremely Delicious! Serves 4-6 Hungry Hogs!

SUPPLIES US SAUSAGE HAM AND BACON

LET OTHERS SAY HIS HEART IS BIG

I CALL IT STUPID OF THE PIG

(Ogden Nash)


INGREDIENTS:

3POUNDS CHICKEN BREAST 

1POUND SMOKED SAUSAGE (OPTIONAL)

(I say OPTIONAL because not everybody likes SAUSAGE)

(And this YUMMY GUMBO is delicious with or without SAUSAGE) 

1/2CUP RANDY’S ROUX

1TABLESPOON MINCED ONION 

1TABLESPOON MINCED GARLIC


2TEASPOONS TABASCO© PEPPER SAUCE 

2TEASPOONS TABASCO© JALAPENO SAUCE 

1TEASPOON BLACK PEPPER    

1TEASPOON LIQUID SMOKE  

1/3CUP BETTER THAN BOUILLON CHICKEN BASE 

(If you can’t find CHICKEN BASE you can use 16 CHICKEN BOUILLON CUBES) 

2POUNDS SLICED OKRA (I like to add a little more, Because OKRA is such a Super Ingredient)  

7CUPS WATER


PREPARATION:

Place all ingredients into a large pot and stir well, while bringing to a good boil. After reaching your good boil, turn heat down to Medium-Low, and once again stir well. Put the Cover on the pot and allow your Yummy Gumbo to cook, with occasional stirs, for an additional 1hour. At last, you can turn the fire off and give your Yummy Gumbo a final good stir. Serve in a bowl with-or-without Rice. Delicious with Buttered French Bread. Freezes well and tastes even better the following day.


MY FRIEND RANDY’S ROUX: 

As you can see from above, this recipe calls for a Roux. A Roux is a browned flour and fat mixture used to add flavor and thickening to many Creole and Cajun recipes. (You may prepare your own Roux or substitute with a commercial Roux)

PREPARATION:

Heat 1cup vegetable oil in a heavy skillet over medium-high-heat. Add 1cup flour, stir constantly and cook until dark brown. Be careful not to burn. Excess Roux keeps well in your refrigerator in a covered jar. And FYI (For Your Information!) me and my wonderful son, Phil D Mayers, Jr. (LITTLE PHIL) sometimes like to use Kary’s Roux when we are too much in a hurry, or too lazy to make our own.
